Casserole of Carrots

Carol says this is Grammy's recipe—as if we couldn't tell from the punny note paper. A recipe for glazed carrots is below.

  • 6 medium carrots
  • 1 can cream of celery soup
  • grated cheese

Peel, slice and cook the carrots. Put carrots and celery soup in a casserole. Cover with grated cheese. Bake 20 minutes at 300°F.

Orange-Glazed Carrots

In 1961 Grace participated in a chain letter in which people mailed recipes. This card is from someone in Prince George, Maryland, who did not include their name. Edythe Risberg's Ozark Pudding is in the Friends section, as are Special K Bars (on the page with Elaine Ferris's No-Bake Cookies). The others are in the Mixed Bag.

  • 1/3 cup sugar
  • 1 tablespoon flour
  • 3/4 teaspoon salt
  • 2 teaspoon grated orange peel
  • 3/4 cup orange juice
  • 2 tablespoon margarine
  • 1 pound carrots

Mix sugar, salt, flour, orange peel. Add orange juice and cook until thickened. Add butter and carrots.

Serves 8

I would cut the carrots into quarters and cook them, either before adding to the glaze or in the glaze as it cooks down.
