Casserole of Carrots

Carol says this is Grammy's recipe—as if we couldn't tell from the punny note paper. A recipe for glazed carrots is below.

• 6 medium carrots
• 1 can cream of celery soup
• grated cheese

Peel, slice and cook the carrots. Put carrots and celery soup in a casserole. Cover with grated cheese. Bake 20 minutes at 300°F.

Orange-Glazed Carrots

In 1961 Grace participated in a chain letter in which people mailed recipes. This card is from someone in Prince George, Maryland, who did not include their name. • 1/3 cup sugar
• 1 tablespoon flour
• 3/4 teaspoon salt
• 2 teaspoon grated orange peel
• 3/4 cup orange juice
• 2 tablespoon margarine
• 1 pound carrots

Mix sugar, salt, flour, orange peel. Add orange juice and cook until thickened. Add butter and carrots.

Serves 8

I would cut the carrots into quarters and cook them, either before adding to the glaze or in the glaze as it cooks down.
