Spicy Banana Cake

  • 1/2 cup shortening
  • 1 cup sugar
  • 2 eggs, unbeaten
  • 1 teaspoon salt
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 2 cups sifted cake flour
  • 1/4 cup milk
  • 1 tablespoon lemon juice
  • 1 1/4 cups mashed ripe bananas (3 or 4)

Cream shortening until light and fluffy. Gradually add sugar, and cream well. Add eggs, one at a time, beating well after each addition.

Sift together dry ingredients.

In a separate bowl, combine milk, lemon juice and bananas.

To the egg mixture, add dry ingredients alternately with banana mixture, beating until smooth after each addition.

Pour into 2 greased 8-inch layer pans. Bake in a moderate oven (375°F) 25 minutes or until lightly browned.

When cool, put layers together and top with whipped cream.
