Chicken PizzarellaGrace thought this recipe was in Aunt Margaret's writing. Carol thinks it might be Grammy Klotz's writing. A scan of the original is below. The writing has Grammy's "m." For comparison, check the scans of Mulligatawny Soup, or other letters from Aunt Sue's folder. The only scan I have that might be Aunt Margaret's writing (or it may be Gramma Moore's) is for Chocolate Cake. Any one of those ladies would be willing to try this recipe.
Heat oven to 350°F. In small saucepan heat oil; add onion, mushrooms, garlic and oregano. Cook over low heat, stirring occasionally, until onion is soft. Stir in tomato sauce and pepper. Place chicken in a 2-quart baking dish. Cover with sauce and bake uncovered 5 minutes. Put mozzarella on top and continue baking 5 more minutes or until cheese is bubbling. Serve over linguine. Serves 8 |
