Chicken Pizzarella

Grace thought this recipe was in Aunt Margaret's writing. Carol thinks it might be Grammy Klotz's writing.

A scan of the original is below. The writing has Grammy's "m." For comparison, check the scans of Mulligatawny Soup, or other letters from Aunt Sue's folder. The only scan I have that might be Aunt Margaret's writing (or it may be Gramma Moore's) is for Chocolate Cake. Any one of those ladies would be willing to try this recipe.

  • 1 tablespoon olive oil
  • 2 teaspoon onion, finely chopped
  • 1 cup mushrooms, thickly sliced
  • 1 small clove garlic, minced
  • 1/2 teaspoon oregano
  • 1 8-ounce can tomato sauce
  • Pepper to taste
  • 8 chicken breast halves (chicken cutlets), boneless and skinless
  • 1 cup sliced mozzarella cheese

Heat oven to 350°F.

In small saucepan heat oil; add onion, mushrooms, garlic and oregano. Cook over low heat, stirring occasionally, until onion is soft. Stir in tomato sauce and pepper.

Place chicken in a 2-quart baking dish. Cover with sauce and bake uncovered 5 minutes. Put mozzarella on top and continue baking 5 more minutes or until cheese is bubbling. Serve over linguine.
