Impossible Zucchini Tomato Pie

Irene and her husband Warren were long-time good friends. Warren was with the New Jersey Dept. of Agriculture and worked with Carl on the state flower show, held for many years at the Armory in Morristown, NJ.

  • 2 cups chopped yellow zucchini
  • 1 cup chopped tomato
  • 1/2 cup chopped onion
  • 1/4 cup grated Parmesan
  • 1 1/2 cups milk
  • 3/4 cup Bisquick
  • 3 eggs
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Heat oven to 400°F. Spray 10-inch quiche or pie plate with oil. Sprinkle veggies and cheese in plate. Beat remaining ingredients until smooth. Pour into plate. Bake until knife inserted 1 inch comes out clean, about 30 minutes. Cool 5 minutes.

Irene wrote: "You can vary or add other things like ripe olives, peppers, mushrooms, etc. to same proportions of bisquick, milk and eggs. Sometimes I also use a carton of egg substitute in place of eggs. Nice for brunch, lunch or dinner!"
