Irene's Ricotta Cake

An "impossible" cheesecake.

Cake mixture

Take 1 package Duncan Hines All Butter Cake mix (yellow or chocolate). Prepare as directed on box. Pour into greased and floured oblong pan (13" x 9" x 2").

Cheese mixture

  • 1 pound (16 ounces) Ricotta cheese
  • 3 eggs, add one at a time
  • 1/2 cup sugar
  • 2 teaspoons vanilla

Mix together well. Pour cheese mixture over cake batter.

Bake at 375°F for 55 minutes.

Cake will rise over cheese mixture. Ricotta mixture will form a custard-like later at the bottom of the pan.

Cool well. Sprinkle with powdered sugar.
