Corned Beef and Cabbage

  • 4 1/2 pounds corned beef
  • 1 bay leaf
  • 1 onion
  • 4 cloves
  • 1 tablespoon vinegar
  • 1 tablespoon brown sugar
  • 1 1/2 pounds new potatoes, peeled
  • 1 1/2 pounds cabbage (one head)
  • 1 small bag carrots

Wash corned beef well. Place in kettle of water to cover. Add bay leaf and onion, into which cloves have been stuck. Boil for one hour. Remove beef and pour off water.

Pour bubbling water over meat and add vinegar and brown sugar. Boil 2 hours.

Add potatoes, cabbage head cut into quarters, and scraped carrots. Cook 1/2 hour.
