Raisin Bars

Filling

  • 2 1/2 cups raisins
  • 2 tablespoons cornstarch
  • 1/2 cup sugar
  • 3/4 cup water
  • 3 tablespoons lemon juice

Mix well. Cook slowly, stirring until thick. Cool.

Dough

  • 3/4 cup soft butter
  • 1 cup brown sugar
  • 1 3/4 cups sifted flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon soda
  • 1 1/2 cups rolled oats

Cream butter and sugar, add dry ingredients, then oats.

Press half the dough into a 13" x 9" pan. Spread with filling. Pat on remaining crust, smoothing with the back of a spoon.

Bake at 400°F for 20 to 30 minutes. Cool, cut in squares.
