Grace guessed "crazy salt" was a brand of seasoned salt. like Mrs. Dash. Sure enough, Krazy Salt is still available and recommended by Epicurious.

Presumably, one hen per dinner guest.

The Hens

Clean cavity and sprinkle with

• onion
• salt
• leaf celery

Place hens in shallow pan and pour over:

• 1/3 cup melted butter

Sprinkle with:

• salt and pepper or
• crazy salt

Bake in 450°F oven about 50 minutes. Baste every 10 minutes.

Basting sauce

• 1/2 cup sherry or white wine
• 1 tablespoon lemon juice
• 1 cup orange juice
