Rhubarb Cake

After I finished all the recipes in Mom's box, I found a card tucked into Food That Really Schmecks, by Edna Staebler (recipes from the Ontario Amish community). On September 21, 2004, Mom wrote to me, "My friend Sarah Halliday sent this rhubarb recipe. I thought you might like to try." But I never did—most of my rhubarb wound up in jam and ice cream sauce.

  • 5 or 6 stalks rhubarb [chopped, I think]
  • 1 to 1 1/2 cups sugar
  • 2 packages strawberry Jello
  • 1 package yellow cake mix
  • 1 stick butter
  • 1 cup boiling water

Place rhubarb and sugar in 10x13 inch dish. Sprinkle jello over them.

Mix cake mix and butter until crumbly. Spread over rhubarb. Pour boiling water around edge.

Bake at 350° about 40 minutes.
