Lima Bean and Bacon Casserole

  • 3 cups cooked lima beans
  • 1 cup diced carrots
  • 1/4 cup chopped celery
  • 1/4 cup chopped onion
  • 4 slices bacon
  • 1 1/2 tablespoons flour
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 3/4 cup dry noodles

Boil carrots, celery, onions, beans and noodles until tender. Save 1/2 cup of the cooking water.

Broil bacon until crisp. Reserve 1 1/2 tablespoons of the fat.

Combine bacon fat, salt and flour. Add vegetable water and milk. Heat and stir until mixture forms a smooth sauce.

Combine all ingredients. Season,* pour into greased baking dish.

Bake in moderate [350°F] oven for 20 minutes.

*At this point, the only seasonings in the ingredients list (salt and bacon) have already been used. I would add pepper and maybe some herbs.
