Quick Coffee Cake

From the spelling, we guess this is another home ec class recipe. From the final directions, this cake is intended to be served from the pan, so bake it in a pretty pie pan or casserole dish

For the cake

  • 2 cups shifted flour
  • 2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1/2 cup sugar
  • 6 tablespoons shortening
  • 1 egg, well beaten
  • 1/2 cup milk

Sift flour once. Measure. Add baking powder, salt and sugar. Sift again. Cut in shortening. In a separate bowl, combine egg and milk. Add to flour mixture, stirring until mixture is blended. Turn into a greased 9-inch layer pan, spreading dough evenly. Brush top with melted butter.

For the topping

  • 1 1/2 tablespoon melted butter
  • 4 tablespoon sugar
  • 1 tablespoon flour
  • 1/2 teaspoon cinnamon

Mix together sugar, flour and cinnamon for topping. Spread it over the dough.

Bake in a hot oven, 400°F, for 25 to 30 minutes. Cut in wedges and remove each separately.
