Hamburger Casserole

This card is in Carol's handwriting, but Grace says the recipe is older than Carol.

Serves 6 to 8.

Finely chop and lightly sauté in large pan:

  • 1 medium onion
  • 1 large carrot
  • 2 celery stalks
  • 3 slices of bacon

Add and cook slowly until brown:

  • a couple spoonfuls of oil
  • 2 pounds chopped meat

Add:

  • salt and pepper to taste
  • 2 cloves
  • Quite a few peeled, seeded and chopped tomatoes
  • Peeled, seeded and chopped peppers

Add water to cover by 2 inches. Let simmer for 1 hour.

Add and cook on high heat until the liquid has evaporated:

  • 1 cup wine

Add:

  • 4 ounces heavy cream
  • 1 can dried mushrooms
