Zucchini Bake

  • 1 1/2 cups zucchini in 1/2-inch slices
  • 1/2 cup onion, in 1/4-inch slices
  • 1 cup boiling salted water
  • 2 cups grated process cheddar cheese (1/2 pound)
  • 3/4 cup milk
  • 3/4 cup V-8 juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 3/4 cup tiny fresh bread crumbs
  • 2 tablespoons melted butter

Heat oven to 350°F.

Cook zucchini and onion in covered dish 5 minutes or until tender. Drain.

Alternate layers of vegetable and cheese in 1 1/2-quart baking dish. Pour on milk, liquid, salt, and pepper.

Mix bread crumbs and butter. Sprinkle over the casserole.

Bake 30 minutes.
