Puffed Rice Stuffing

Haven't tried this, but I would use lots more veggies. For a more traditional stuffing see Grandma Jeffs' stuffing from Averil's book.

I remember Puffed Rice cereal fondly, not because of the taste (toasty) or texture (sticky), but because of the 1812 Overture in the commercial: "This is the cereal that's Shot! From! Guns!" Of course we had to have it!

The recipe card says "Mock Wild Rice Stuffing," making me think that no one in 1960's New Jersey had ever seen wild rice, much less tasted it.

  • 1/3 cup chopped onion
  • 2 tablespoons chopped green pepper
  • 2 tablespoons chopped celery
  • 2 tablespoons butter
  • 1 egg
  • 1 teaspoon sugar
  • 8 cups puffed rice
  • 1 can mushroom soup

Cook vegetables in butter until tender. Add to puffed rice. Mix well. Combine soup and egg; pour over rice. Mix well. Pack into bird. Makes enough for a small turkey.
