Lemon-Jello Pineapple Pudding


Grace thinks this recipe came from radio or TV. It reminds me of a song Hal's family introduced me to: "Lime Jello, Marshmallow, Cottage Cheese Surprise!". This performance is by Joan Morris with her husband, composer Walter Bascom on piano. Make heaps!

  • Lemon Jello prepared with
    • 1 cup water and
    • 1 cup pineapple juice
    • 1/2 cup sugar (Cook juice and sugar together)
  • Dream Whip [a whipped cream substitute]
  • 1 cup cheese [I'd guess cottage cheese or ricotta]
  • 1 cup crushed pineapple
  • 1 cup grated cheddar
  • 1 cup finely chopped walnuts

The original directions didn't get past "Cook the juice and sugar together." The method for jello salads is pretty simple. Mix the jello and start it cooling. When it is cool and somewhat thick, but not jelled, mix in everything else and put it back in the fridge until it is set. One packet of Dream Whip makes about 2 cups—I would use about 1 cup of real whipped cream.
