Sponge Cake
Beat eggs, add sugar, then half the flour, then the rest of the flour, to which has been added 1 teaspoon baking powder. Add boiling water and flavoring. Bake in a rather hot [400°F] oven 20 minutes. The Rich Chocolate Icing on the icing page was intended for a sponge cake. Or you could use this cake in an Apple Charlotte or a trifle. Orange Sponge CakeCarol's box of Jeffs recipes included an Orange Sponge from cousin Louise Lockhart. If you save one egg white as she directs, you could make white icing.
Separate eggs, reserving 1 white for the icing. Beat the yolks until creamy. Add sugar gradually, then orange juice and water. Beat until the mixture bubbles. Add flour gradually [with soda and cream of tartar], then fold in the beaten whites of two eggs. Bake 30 to 40 minutes. [I would use a moderate oven, about 350°F] |
