Crumb Cake

This is basically a coffee cake with a baked topping. I've added an unbaked crumb topping from the mystery box.

For the cake:

  • 1 tablespoon butter, melted
  • 1 egg
  • 3/4 cup sugar
  • 2 cups flour
  • 2 teaspoons baking powder
  • 3/4 cup milk

Pour batter into 2 greased and floured layer pans. Set aside.

For the crumb topping:

  • 1 tablespoon butter (not melted)
  • 1/4 cup sugar
  • 1/2 cup flour
  • 1 teaspoon cinnamon

Mix well and spread on the 2 cakes. Bake at 375°F for 25 minutes.

Bake the bare cake at 375°F for 25 minutes. While the cake is baking, make the topping. Mix together:

  • 1 dozen zweibach, rolled fine
  • 3/4 cup brown sugar
  • cinnamon
After the cake is done, while it is still warm, spread icing or butter over the top and then sprinkle on the crumb mixture.

Zweiback (German for "twice-baked") is bread that has been baked, sliced thick, and baked a second time. Commonly used for teething babies, it is still available commercially, and there are lots of on-line recipes. I wonder if you could substitute biscotti crumbs (and reduce the sugar) for more flavor?
