Coffee Cake

The recipe in Averil's book was incomplete. Here is a coffee cake recipe from the mystery box. To approximate the cake in the book, replace (or supplement) the almonds with apple slices.

• For the cake
  • 1/4 cup butter
  • 1/2 cup sugar
  • 1 cup milk
  • 1 egg
  • 1/2 teaspoon salt
  • 1 1/2 cup flour
  • 1 teaspoon baking powder
• For the topping
  • butter
  • sugar
  • cinnamon
  • chopped almonds

Cream butter and sugar; add egg, milk, and dry ingredients. Pour batter in shallow pan. Dot with bits of butter, sprinkle with sugar, cinnamon and chopped almonds. Bake at 375°F for 25 minutes.
