Bread and Butter Pudding

I haven't seen suet in bread pudding before. And this looks like it would be pretty good with cubed bread and fruit mixed together, without the suet or layers. I keep telling myself I need to try this just to see what proportions work best, but that hasn't happened yet.

Layer alternately in bowl until it is nearly full:

  • 1/2 pound beef suet, chopped fine
  • currants
  • raisins
  • candied peel
  • bread

Custard:

  • Eggs
  • milk
  • grated rinds of lemons
  • sugar to taste

To test pudding: stick a knife to bottom. If it comes out milky, it's not done; if greasy, cooked.
