Louise's PopoversAunt Averil left a page in her book for Louise's Popovers. That page was blank, but the recipe turned up in the mystery box. (From other recipes): Put the muffin pan in the oven and preheat to 450°F.
Mix flour and salt. Add milk. When batter is smooth, add butter and beaten egg. Beat mixture thoroughly with an egg beater. Turn into very hot muffin pans. Joy of Cooking says to bake the popovers for 15 minutes at 450°, then turn the heat down to 350°, without opening the oven, and bake for 20 minutes more. |
