Also, here is a recipe that we thoroughly enjoy. In fact, a couple of men from Rutgers were here last night for dinner and liked it so much they copied the recipe for their wives.

A couple of weeks ago we saw the movie "That Darn Cat." It was pretty good! Took a ride to new Sandy Hook State Park Sunday. Boy! Was it cold.

Whip & Chill Cranberry Orange Dessert

Whip&Chill was a Jello product from the 1960s, an instant mousse, a little thicker and grainier than instant pudding. Use vanilla pudding or your favorite custard recipe. There are various brands of cranberry relish; for homemade, cook cranberries and chopped orange (including juice and peel) with sugar and a little water until it is thick. If you want something a little zippier, see below for my recipe, adapted from the Minneapolis Star Tribune many years ago.

  • 1 package vanilla Whip&Chill mix
  • 3/4 cup cold water
  • 1/4 cup sour cream
  • 1/2 cup cranberry-orange relish

Blend mix with water and whip at highest speed for one minute. Mixture will be thick. Blend in sour cream. Whip at highest speed two minutes. Fold in cranberry-orange relish. Chill two hours. Top with chopped nuts.

Celtic dragon's head Cranberry Ginger Chutney

  • chopped peel of an orange
  • 1 tablespoon olive oil
  • 2 tablespoons grated fresh ginger
  • 1 cup cranberries, coarsely chopped (this will work with up to 2 cups)
  • 3 tablespoons real maple syrup (or more to taste)
  • 1/4 cup slivered almonds (the original used walnuts)

Boil the orange peel for 5 minutes, drain and set aside. Saute ginger in oil for a minute, stirring constantly to avoid sticking. Add cranberries, orange peel and maple syrup. Cook covered 5 minutes or so until it gets thick. Taste and add more syrup, if needed. Stir in almonds.

If you aren't making the dessert, you can spread this on turkey sandwiches for a picnic at Sandy Hook, a national park at the mouth of the Raritan River.
