Lebkuchen

  • 1 cup honey
  • 3/4 cup brown sugar
  • 1 egg
  • 1 teaspoon grated lemon rind
  • 1 teaspoon lemon juice
  • 1 teaspoon cinnamon
  • 1/2 teaspoon allspice
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon cloves
  • 2 1/2 cups flour
  • 1/2 teaspoon baking soda
  • 1/2 cup chopped citron
  • 1/2 cup chopped nuts
  • [powdered sugar]

Boil honey [or heat it enough to dissolve the sugar]. When cool add sugar and then other ingredients. Put in refrigerator overnight. Bake at 350°F on greased sheet, 10 minutes. Top with xxxx sugar [confectioners sugar] and water [mixed together to make a glaze]. Brush on while cookies are hot.

Roll the cookie dough somewhat thick. Traditional shapes for lebkuchen are circles and hearts.

Lebkuchen means something "lively cake." Be generous with the spices.
