Quick Coffee Cake

From the spelling, we guess this is another school recipe.

Cake

• 2 cup shifted flour
• 2 teaspoon baking powder
• 3/4 teaspoon salt
• ½ cup sugar
• 6 tablespoon shortening
• 1 egg, well beaten
• ½ cup milk

Topping

• 1½ tablespoon melted butter
• 4 tablespoon sugar
• 1 tablespoon flour
• ½ teaspoon cinnamon

For dough: Sift flour once. Measure. Add baking powder, salt and sugar. Sift again. Cut in shortening. In a separate bowl, combine egg and milk. Add to flour mixture, stirring until mixture is blended. Turn into a greased 9-inch layer pan, spreading dough evenly. Brush top with melted butter.

For topping: Mix together sugar, flour and cinnamon for topping. Spread it over the dough.

Bake in a hot oven, 400º, for 25 to 30 minutes. Cut in wedges and remove each separately.
