Shrimp Chowder

8 servings. Does anyone in the family remember this one? Did it really have cheese?

In a Dutch oven [or soup kettle], sauté onion slices in hot margarine until tender. Add boiling water, then potatoes, salt and pepper. Simmer covered 20 minutes or until potatoes are tender. Do not drain.

Meanwhile, heat milk with grated cheese until cheese has all melted and milk is hot. Do not let it boil.

Add shrimp to potatoes and cook until they turn pink, about 3 minutes. Add hot milk and cheese mix. Heat chowder, but do not boil.

Serve sprinkled with chopped parsley.
