Layered Noodle Bake

Aunt Margaret Gernert was Gramma Moore's sister, Grace's aunt. Carol remembers as more a baker than Gramma Moore, but Grace only had an entrée from her and a cookie recipe from her mother-in-law.

This seems to be a variation on lasagna. Grace also had two lasagna recipes and another for a noodle casserole.

  • 1 package (3 ounces) cream cheese
  • 1/2 cup cottage cheese
  • 1/4 cup sour cream
  • 1/2 pound ground beef
  • 1/2 cup chopped onion
  • 1/2 cup chopped green pepper
  • 1 tablespoon butter or margarine
  • 1/2 teaspoon salt
  • 1 tablespoon salt
  • 3 quarts boiling water
  • 7 ounces (5 1/2 to 6 cups) medium egg noodles
  • 2 tablespoons butter, melted
  • 1/4 cup grated Parmesan cheese

Blend cream cheese, cottage cheese and sour cream. Set aside.

In skillet, brown beef, onion, and green pepper in 1 tablespoon butter, stirring to separate meat particles. Stir in tomato sauce and 1/2 teaspoon salt. Cook 5 to 6 minutes and drain noodles in colander.

In 2-quart casserole, put a layer of noodles, cover with cheese mixture, then a layer of noodles, cover with meat mixture, repeat. Pour melted butter over the casserole. Top with cheese.

Bake at 325°F about 40 to 50 minutes, until bubbling and nicely browned.
