Louise Boulton was a cousin of Averil's mother, Grampa Jeffs' first wife, Eliza, née Boulton.

Into a greased dish put

  • a layer of raw, sliced potatoes
  • a layer of finely cut onion
  • a little butter, pepper, salt and flour

Continue until dish is nearly filled. Pour in milk until dish is filled. Bake in a fairly quick oven.

Great-Grammy says, “A 'quick' oven means a fast one, probably 400° or so. But I often do them at 350° for 45 to 60 minutes or until done." She gave me a conversion chart, which I have used throughout this section.
