Egg-Cheese Souffle Salad

There was a time when no picnic or pot luck was complete without a Jello salad. (See Lemon-Jello Pineapple Pudding in Grace's recipe box for another example). This recipe starts on page 3 of a letter:

That is exciting. Today we were actually allowed to hit the ball back over the net—won, what fun.
Well, here are some recipes.

Aunt Sue added: This recipe is from a roomate of mine—home ec teacher

  • 1 package lemon flavored gelatin
  • 1 cup hot water
  • 1/2 cup cold water
  • 1/2 cup mayonaise
  • 1 tablespoon lemon juice
  • 3/4 teaspoon salt
  • 3 or 4 drops tabasco sauce
  • 3/4 cup shredded cheese (Cheddar)
  • 3 or 4 hard-cooked eggs, chopped
  • 1/2 cup diced celery
  • 1/4 cup diced green pepper
  • 2 tablespoons diced pimento
  • 1 teaspoon grated onion
  • Chill until firm

Dissolve gelatin in 1 cup hot water. Add cold water, mayonaise, lemon juice, salt and tabasco. Blend well. Chill until partially firm. Beat until fluffy. Fold in remaining ingredients.
