Zucchini Bake

• 1½ cup zucchini in ½-inch slices
• ½ cup onion, in ¼-inch slices
• 1 cup boiling salted water
• 2 cup grated process cheddar cheese (½ pound)
• ¾ cup milk
• ¾ cup V-8 juice
• ¼ teaspoon salt
• ¼ teaspoon pepper
• ¾ cup tiny fresh bread crumbs
• 2 tablespoon melted butter

Heat oven to 350ºF.

Cook zucchini and onion in covered dish 5 minutes or until tender. Drain.

Alternate layers of vegetable and cheese in 1½-quart baking dish. Pour on milk, liquid, salt, and pepper.

Mix bread crumbs and butter. Sprinkle over the casserole.

Bake 30 minutes.
