Puffed Rice Stuffing

Makes enough for a small turkey. Haven't tried this, but I would use more of the veggies.

I remember Puffed Rice cereal fondly, not because of the taste (toasty) or texture (sticky), but because of the 1812 Overture in the commercial: "This is the cereal that's Shot! From! Guns! Of course we had to have it!

The recipe card says "Mock Wild Rice Stuffing," making me think that no one in 1960's New Jersey had ever seen wild rice, much less tasted it.

Cook vegetables in butter until tender. Add to puffed rice. Mix well. Combine soup and egg; pour over rice. Mix well. Pack into bird [or follow modern caution and bake in a large casserole].
